Uly, when we talk about emails we don't say достал его. It would work fine if it was a physical letter in your physical mailbox. It would be better to say:
... я проверил ящик спама и увидел / нашёл / прочитал его.

in your version, if we change "I would have thought you would’ve responded" to be "I thought you would’ve responded", how will it change the meaning between the two? e.g. can you comment on both so that we could see the difference?

My version expresses a little more frustration and disappointment, and is kind of accusatory towards the listener. Your version is more a statement of facts.
