Если сравнить определения дозаривания и bletting, то как-то не складывается 2+2 у меня

Bletting is when you have something ripe (tomatoes, grapes) and want it softer but not rotten, you place it in a cool dry place and wait until it is so

Does this mean that in English both processes are the same? Because I would describe bletting as вяленье

Боюсь, что термин настолько узкоспециальный, что профи Вы не найдете на этом сайте. Я впервые услышал и русское слово тоже
И, кстати, вяленье предполагает удаление влаги и соответственно конечный продукт будет более твердым, а не мягким

I just read up on this. According to Wikipedia, bletting is the name given to a process that happens naturally in fruits and is considered a stage of ripening, not something performed on them by industry. Degreening, on the other hand, is a chemical process performed on fruit that is ripe, but still has some green on the outside. I don’t know which one of these the Russian word designates, if either.
