The thing is that "that" would focus too much on the book and not on the situation - the fact that nobody was reading it. If, conversely, the book was important because of a specific detail, then "that" would sound better: "On the table lay open the book that I had given her the day before."

I see. What I'm trying to understand is "which" and "that" can be both used in Nominative and accusative clauses, right?
And what about the tense - if nobody just read in general, for some time, can Past Simple be used?

The problem is that if you mention any kind of element that suggests "for some time" then the perfect has to be used.

"In an armchair sat his mother" - это тоже оттуда

В приведенных примерах речь идёт не о том, кто что делал и что где висело, а описывается картина, обстановка. При basic word order было бы His mother sat in an armchair, и это никак не могло бы иметь отношения к описываемой обстановке. Короче, инверсия позволяет сместить акценты и в данном случае работает на художественный образ
