Хрен посчитаешь means "you can't count, there is no way to count something". I just don't know if the phrase "like hell..." makes any sense in English. It's just what I found in a dictionary. Is it possible to say so?

LIKE HELL in this case means I DON’T BELIEVE you can: (A) I can taste any wine and tell you what vintage it is. (B) Like hell you can! (=ерунда!)

Otherwise LIKE HELL or THE HELL means that you consider something to be a lie: (A) Jane told me she was an electrical engineer, and has an apartment in New York and a condo in Miami. (B) Like hell she does! She works at McDonald’s and lives in a trailer park! (=that’s bullshit)
