"each person" refers to everyone in a specific group, not to everyone in the world: A study was conducted to test the effects of smoke on diabetics. "There were 20 participants. Each person was exposed to cigarette smoke for 10 minutes." This refers to each of the participants in the study. When speaking generally about everyone in the world, we say "every man."
