It's not incorrect to learn DO GARDENING as a verb, but you should know that we don't really use it as such - it's better to learn the uses of DO -ING and know that it applies to almost any verb. For instance, if asked about your typical day, you would not say "I do gardening;" or speaking of someone's hobbies "He does gardening." There are, however, special circumstances when we use the verb DO with GARDENING (or any verb), usually involving extra words: (1) With THE when we refer to gardening as one of the household chores: "On Saturdays, Carl mows the lawn and does the gardening." (2) With SOME (-or- A BIT OF/A LITTLE) it indicates doing it for a while, for leisure: "If I have time this weekend, I'm going to do some gardening." (3) With ANY - (a) as a restriction: The doctor said that until my back heals from the surgery, I can't do any gardening. -or- (b) when asking about SOME (above): "Did you do any gardening this weekend?"
Otherwise, we simply use the verb GARDEN: "I like to garden on the weekend." -or- "He gardens in his spare time."

Anna, I believe that this usage of DO is comparable, for the most part, to the use of the Russian prefix по-. If I'm not mistake, you could say: (A) Какие у тебя планы на выходные? (Б) Ну, если погода будет хорошей, то поработаю/позанимаюсь в саду. (excuse any mistakes). In other words, it's a way of expressing HOW you spend your time, not so much WHAT you're doing.
