HEREWITH means that there is something enclosed in the envelope that certifies the sale: HEREBY is in the actual wording of the certification enclosed. Two different things.

Если это сопровождающее письмо, то странно видеть "confirm" именно в письме.
“I/We herewith confirm having sold to you this day (quantity) ab. 500 (five hundred) tons of 1,000 kilos (description) of Plate rye faq rye terms crop ..." - здесь тоже многовато деталей для письма, если есть еще и приложение.

If you use HEREWITH, you don’t have to use ENCLOSED. Also, lots of natives confuse HEREWITH with HEREBY.
