Андрей, у "get off" много разных значений, но ни одно из них не означает "вставать с". Посмотрите в словарях, там есть все значения. Что касается "on which I had been sitting", то грамматически конструкция правильная и сказать так можно, но в реальности так никто не говорит, скажут "... I had been sitting (on)".

Я встал с дивана, на котором сидел, и подошел к окну. Прошел дождь, и везде стояли лужи.

Я перевел как: "I got off the couch on which I had been sitting and went to the window. It had been raining and there were puddles everywhere."
В учебнике было: "I got up from the couch I had been sitting and went to the window. It had been raining and there were puddles everywhere."
Правилен ли мой перевод? Можно ли было так употребить got off и on which?

"Of" не переводится как "с". Встать с чего-либо - это "get up FROM something".
